Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |

- Ground Turkey 165° F |

If using 16 oz. pulled pork, follow same instructions as 8 oz. pulled pork.

If using precooked shredded beef, follow same instructions as pulled pork in Steps1 and 2, cooking until beef is heated through and reaches a minimum internal temperature of 145 degrees, 18-20 minutes.

If using shrimp, follow same instructions as pulled pork in Steps 1 and 2, cooking until shrimp reaches minimum internal temperature, 18-20 minutes.

If using diced chicken thighs, follow same instructions as pulled pork in Steps 1 and 2, cooking until chicken reaches minimum internal temperature, 18-20 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

1 Prepare the Ingredients
Preheat oven to 400 degrees. Thoroughly rinse any fresh produce and pat dry.
Mix pepper and onion mix, corn, salsa, seasoning blend, 1/4 tsp. salt, and a pinch of pepper in provided tray. Spread into a single layer.Bake uncovered in hot oven, 10 minutes.[AFTERPARTY PIC: no pulled pork, just veggies in tray] -
2 Bake the Dish
Carefully, remove tray from oven. Stir in pulled pork.
Bake again uncovered in hot oven until peppers are tender and pulled pork is heated through, 8-10 minutes. -
3 Finish the Dish
Carefully remove tray from oven.
Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.Fill tortillas with pulled pork mixture, cheese, and sour cream. Top with hot sauce (to taste). Bon appétit!
