  • 1 Colander
  • 1 Large Non-Stick Pan
  • 1 Medium Oven-Safe Casserole Dish

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Cook the Pasta

    Once water is boiling, add pasta and 2 tsp. salt and cook until al dente, 9-11 minutes.

    Reserve 1 cup pasta cooking water. Drain pasta in a colander and set aside.

    While pasta cooks, continue recipe.

    Cook the Sausage

    Remove Italian sausage from casing, if necessary.

    Place a large non-stick pan over medium-high heat.

    Add 1 tsp. olive oil and Italian sausage to hot pan. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 3-5 minutes.

    While sausage cooks, continue recipe.

    Add Vegetables and Start Sauce

    Stem and mince oregano.

    Mince garlic.

    Add pepper and onion mix and red pepper flakes (to taste) to pan with sausage and cook until starting to soften, 4-6 minutes.

    Add garlic and cook until fragrant, 30-60 seconds.

    Add crushed tomato, oregano, and half the pasta cooking water (reserve remaining for adjusting consistency). Bring to a simmer.

    Add the Pasta and Sausage

    Once simmering, add pasta to pan with sauce and stir to combine. If too dry, add remaining pasta cooking water, 1 Tbsp. at a time, until desired consistency is reached.

    Gently stir in dollops of ricotta and half the Parmesan (reserve remaining for topping), leaving some clumps.

    Remove from burner.

    Transfer pasta-sausage mixture to prepared casserole dish. Top with remaining Parmesan and mozzarella.

    Finish the Dish

    Broil under hot broiler until cheese has slightly browned, 2-4 minutes.

    Don't text and broil! Keep an eye on oven as cheese may burn easily under broiler.

    Carefully remove from broiler.
