Here we combine the heat from hot sauce with a garlic sesame sauce and use the resulting spoon-licking perfection to cook snap peas and sweet potatoes. Served with avocado, this meal is hip and happening, with just the right amount of spice. Tip: Having trouble cutting that wobbly sweet potato? Trim off 1/4" along its length and cut that section into 1/2" dice. Turn sweet potato onto its flat side. You now have a flat base to work from while you dice the remaining sweet potato.

Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil. If using diced chicken breasts, pat dry and stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. If using Impossible burger, break up until burger reaches a minimum internal temperature of 160 degrees, 4-6 minutes. If using shrimp, pat dry and cook until shrimp reach minimum internal temperature, 2-3 minutes per side. If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until no pink remains and steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes. Add to dish as desired.

1 Start the Sweet Potatoes
Peel and cut sweet potato into 1/2" dice.
Combine sweet potatoes, 1 Tbsp. water, 1/4 tsp. salt, and a pinch of pepper in a microwave-safe bowl. Cover with a damp paper towel.Microwave covered until tender, 5-7 minutes.While sweet potatoes cook, continue recipe. -
2 Prepare the Snow Peas
Trim snow peas.

3 Cook the Vegetables
Place a large non-stick pan over medium-high heat. Add 1 tsp. olive oil, snow peas, and carrots to hot pan. Stir occasionally until starting to brown, 2-4 minutes.
Add 2 Tbsp. water, cover, and cook until tender, 2-4 minutes.Transfer vegetables to a plate. Return pan to medium heat.Add 1 tsp. olive oil, sweet potatoes, and a pinch of salt and pepper to hot pan. Stir until lightly browned 3-5 minutes.Stir in garlic sesame sauce, hot sauce (to taste), 2 Tbsp. water, and vegetable mixture. Stir occasionally until coated, 1-2 minutes.Remove from burner.While vegetables cook, continue recipe. -
4 Cook Rice, Prepare Avocado, and Finish Dish
In another large microwave-safe bowl, combine rice, 11/4 cups water, and 1/4 tsp. salt. Microwave uncovered, 4 minutes.
Carefully remove rice from microwave and stir. Microwave again uncovered, 2 minutes.While rice cooks, halve avocado and remove pit by carefully tapping pit with the blade of your knife so it sticks. Gently twist knife to release pit. Scoop out the flesh with a spoon. Cut into 1/4" slices.Plate dish as pictured on front of card, topping rice with vegetable mixture and avocado. Garnish with sesame seeds. Bon appétit!
