Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Meatloaves
In a mixing bowl, combine ground beef, panko, mayonnaise, garlic salt, Italian seasoning, and a pinch of pepper. Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.
Place meatloaves on one half of prepared baking sheet and evenly top with 2 tsp. olive oil.Roast in hot oven, 10 minutes.Meatloaves will finish cooking in a later step.While meatloaves roast, continue recipe. -
2 Prepare the Potatoes
Quarter potatoes. (Cut into eighths if larger than a ping-pong ball.)
Place potatoes in a microwave-safe bowl and cover with a damp paper towel.Microwave covered until tender, 3-5 minutes.Carefully remove from microwave. -
3 Add Vegetables and Top Meatloaves
After 10 minutes, carefully remove baking sheet from oven.
Place microwaved potatoes, pepper and onion mix, 2 tsp. olive oil, pot roast seasoning, 1/4 tsp. salt, and a pinch of pepper on empty side of baking sheet. Stir to combine and spread into an even layer on their side. Sheet will be hot! Use a utensil. Wipe microwave-safe bowl clean and reserve.Evenly top meatloaves with half the marinara (reserve remaining for garnish). -
4 Finish Meatloaves and Vegetables and Finish Dish
Roast in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 160 degrees, 10-12 minutes.
While vegetables and meatloaves roast, place remaining marinara in reserved microwave-safe bowl.Microwave uncovered until heated through, 30-60 seconds.Carefully remove sheet from oven.To serve, top meatloaf with marinara. Slice meatloaf, if desired. Bon appétit!
