If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first, and cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until salmon reaches minimum internal temperature, 4-6 minutes per side.

If using sirloin steaks, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Prepare the Potatoes
Cut potatoes into 1/2" dice.
Place potatoes in a microwave-safe bowl and cover with a damp paper towel.Microwave covered until tender, 4-6 minutes.Carefully remove from microwave.While potatoes microwave, continue recipe. -
2 Prepare the Chicken
Pat chicken dry. Season both sides with 1/4 tsp. salt and a pinch of pepper.
Evenly top one side of chicken with mustard, then panko, pressing gently to adhere.Place chicken on one half of prepared baking sheet. Spray with cooking spray. -
3 Roast the Vegetables and Chicken
Place microwaved potatoes, butternut squash, 2 tsp. olive oil, garlic salt, Italian seasoning, and a pinch of pepper on empty half of baking sheet. Massage oil and seasonings into vegetables. Potatoes may be hot! Use caution. Spread into an even layer on their side.
Roast in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven.While vegetables and chicken roast, continue recipe. -
4 Make Piccata Butter and Finish Dish
Coarsely chop capers.
In a mixing bowl, combine softened butter, lemon juice, and capers.To serve, top chicken with piccata butter. Bon appétit!
