If using ground turkey, roast until meatballs reach minimum internal temperature, 17-20 minutes.

1 Prepare the Ingredients
Finely crush crackers.
Slice plantains lengthwise.In a mixing bowl, combine crackers and 2 Tbsp. water. Let sit, 1 minute.After 1 minute, add ground beef, chile and cumin rub, and 1/4 tsp. salt. Stir until thoroughly combined. Form meat mixture into 6 equally-sized meatballs. -
2 Roast the Plantains and Meatballs
Place plantains on one side of prepared baking sheet. Spread into a single layer on their side.
Place meatballs on empty side of sheet.Roast in hot oven until plantains are browned and meatballs reach a minimum internal temperature of 160 degrees, 15-20 minutes.Carefully remove sheet from oven and stir a pinch of salt into plantains until combined. Sheet will be hot! Use a utensil.While plantains and meatballs roast, continue recipe. -
3 Heat the Rice
Carefully massage rice in bag to break up any clumps. Remove rice from packaging.
In a microwave-safe bowl, combine rice, 1/4 tsp. salt, and half the sofrito sauce (reserve remaining for slaw).Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Fluff rice with a fork.While rice microwaves, continue recipe. -
4 Assemble Slaw and Finish Dish
In another mixing bowl, combine cabbage, mayonnaise, remaining sofrito sauce, and a pinch of salt.
To serve, top rice with meatballs, plantains, and slaw. Garnish meatballs with chipotle crema. Bon appétit!
