Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Prepare the Vegetables
Trim zucchini ends, halve lengthwise, and cut into 1/2" slices on an angle. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.
Remove stem, seeds, and ribs, and cut bell pepper into 1/2" slices.On prepared baking sheet, combine zucchini, bell peppers, 1/4 tsp. salt, and 1 tsp. olive oil. Push to one side of sheet. -
2 Add the Meatloaves
In a mixing bowl, combine ground beef, ricotta, panko, Italian seasoning, 1/4 tsp. salt, and a pinch of pepper.
Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place on empty side of baking sheet. -
3 Roast the Meatloaves and Vegetables
Roast in hot oven, 10 minutes.
Carefully remove from oven. Top meatloaves evenly with marinara, then Italian cheese blend. Loaves will be hot! Use caution. -
4 Melt Cheese and Finish Dish
Roast again in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 160 degrees, 8-10 minutes.
Carefully remove from oven. Stir pesto into vegetables. Sheet will be hot! Use a utensil.To serve, top vegetables with Parmesan. Bon appétit!
