Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

  • If using sliced beef, pat dry, coarsely chop, then separate pieces. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until beef reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

    Toast the Tortillas

    Tostadas are a delicious, but messy treat. For this recipe, they can easily be converted to tacos. Simply warm tortillas in oven for 1-2 minutes after completing steps.

    Poke tortillas with a fork all over, 10 times for each tortilla. Place directly on oven rack in a single layer.

    Toast in hot oven until slightly browned and crisp, 3-6 minutes.

    Carefully remove from oven.

    While tortillas toast, continue recipe.

    Start the Vegetables

    Place mixed peppers and onions on prepared baking sheet. Toss with 1 tsp. olive oil, half the fajita seasoning (reserve remaining for shrimp), and cilantro lime pepper salt. Spread into an even layer.

    Roast in hot oven, 10 minutes.

    While vegetables roast, continue recipe.

    Add Shrimp and Finish Vegetables

    Pat shrimp dry. Season all over with remaining fajita seasoning and a pinch of salt.

    After 10 minutes, carefully remove sheet from oven and push vegetables to one side of sheet. Sheet will be hot! Use a utensil.

    Add shrimp to empty side of sheet and evenly top with 1 tsp. olive oil.

    Roast in hot oven until vegetables are tender and shrimp reach a minimum internal temperature of 145 degrees, 8-10 minutes.

    Carefully remove from oven.

    While vegetables and shrimp roast, continue recipe.

    Prepare Ingredients, Mash Beans, and Finish Dish

    Drain and rinse beans in a colander/strainer. Place beans in a microwave-safe bowl and mash with a fork until slightly chunky. Stir in 2 tsp. water, fiesta seasoning, and cream cheese until combined.

    Microwave uncovered until heated through, 1-2 minutes.

    While beans microwave, stem cilantro, keeping leaves whole.

    Halve lime. Cut one half into wedges and juice the other half.

    Carefully remove beans from microwave and stir in 2 tsp. lime juice until combined.

    To serve, evenly top tortillas with beans, vegetables, then shrimp. Garnish with chipotle crema and cilantro. Squeeze lime wedges over to taste. Bon appétit!
