Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon or sirloin steaks, pat dry. Add steaks to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Prepare the Ingredients
Halve lime. Cut one half into wedges and juice the other half.
Stem cilantro and coarsely chop leaves. -
2 Prepare the Trout
Pat trout dry. Season flesh side with Asian garlic, ginger & chile seasoning (use less if spice-averse), 1/4 tsp. salt, and a pinch of pepper.
Place trout, skin-side down, on one side of prepared baking sheet. Evenly top trout with sugar and 1 tsp. olive oil. -
3 Add the Cauliflower
Place cauliflower on empty side of sheet. Toss with 2 tsp. olive oil, garlic salt, and a pinch of pepper. Spread into a single layer on their side.

4 Roast Cauliflower and Trout, Heat Butter, and Finish Dish
Roast in hot oven until cauliflower is tender and trout reaches a minimum internal temperature of 145 degrees, 10-15 minutes.
While cauliflower and trout roast, place butter in a microwave-safe bowl. Microwave uncovered until melted, 30-45 seconds.Carefully remove from microwave and stir. Set aside.Carefully remove sheet from oven.To serve, top cauliflower with trout and garnish with cilantro. Top cauliflower with butter and lime juice (to taste). Squeeze lime wedges over dish to taste. Bon appétit!
