Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using diced chicken breasts, pat dry. Follow same instructions as shrimp in Steps 1 and 2, baking uncovered in hot oven until chicken reaches minimum internal temperature, 20-25 minutes.

If using whole chicken breasts, pat dry, and on a separate cutting board, cut into 1” dice. Follow same instructions as above.

1 Prepare the Ingredients
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Drain shrimp thoroughly and pat dry. Combine shrimp and BBQ spice rub (use less if spice-averse) in provided tray. Push to one side.Combine peppers, 1 tsp. olive oil, and a pinch of salt and pepper in empty side of tray. -
2 Bake the Peppers and Shrimp
Bake uncovered in hot oven until peppers are tender and shrimp reach a minimum internal temperature of 145 degrees, 15-20 minutes.
While peppers and shrimp bake, continue recipe. -
3 Assemble the Tacos
Combine slaw mix and dressing in a mixing bowl.
In another mixing bowl, combine mayonnaise and Sriracha (to taste).Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.Carefully remove tray from oven.To serve, fill tortillas with shrimp, peppers, and slaw mix. Garnish with Sriracha aioli (to taste) and wonton strips. Bon appétit!
