Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Start the Chicken and Tomatoes
Prick tomatoes with a fork.
Place in provided tray and add 1 tsp. olive oil. Stir to combine and push to one side of tray.Pat chicken dry and season all over with garlic and parsley seasoning and 1/4 tsp. salt. Place chicken in now-empty side of tray.Bake uncovered in hot oven until chicken browns and tomatoes soften, 10-12 minutes.Chicken will finish cooking in a later step. -
2 Add the Couscous
Carefully remove tray from oven and drain excess liquid. Tray will be hot! Use caution.
Add couscous, 1/4 tsp. salt, and a pinch of pepper to tomatoes. Stir to combine and cover couscous side of tray with foil. -
3 Bake Meal and Make Sauce
Bake again half-covered (chicken uncovered, couscous covered) in hot oven until couscous is heated through and chicken reaches a minimum internal temperature of 165 degrees, 12-15 minutes.
While meal bakes, mince chives.In a microwave-safe bowl, combine cream cheese, mirepoix base, paprika, and 2 Tbsp. water. Cover with a damp paper towel. Microwave covered until melted and smooth, 30-60 seconds.Carefully remove sauce from microwave and stir to combine.Carefully remove tray from oven. Transfer chicken to a plate. Add butter to couscous and stir until melted and combined.To serve, top chicken with sauce and garnish couscous with chives and cotija. Bon appétit!
