If using ground beef, bake uncovered in hot oven until loaves reach minimum internal temperature, 25-30 minutes.

If using ground turkey, bake uncovered in hot oven until loaves reach minimum internal temperature, 30-35 minutes.

If using Impossible burger, bake uncovered in hot oven until loaves reach a minimum internal temperature of 160 degrees, 28-30 minutes.

1 Start the Green Beans
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Break green beans in half.Combine green beans, 1 Tbsp. water, 2 tsp. olive oil, a pinch of salt, 1/4 tsp. pepper, and half the chile and cumin rub (reserve remaining for meatloaves) in provided tray.Bake uncovered in hot oven, 10 minutes.While green beans bake, continue recipe. -
2 Add the Meatloaves
Finely crush crackers.
Drain and rinse black beans.In a mixing bowl, combine crushed crackers and 2 Tbsp. water. Let sit, 1 minute.After 1 minute, add ground pork, 1/4 tsp. salt, and remaining chile and cumin rub.Form pork mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.Carefully remove tray from oven. Add beans and corn and stir to combine. Push to one side of tray. Tray will be hot! Use a utensil.Add meatloaves to now-empty side of tray.Top loaves evenly with enchilada sauce and cheese. -
3 Bake the Meal
Bake uncovered in hot oven until green beans are tender and meatloaves reach a minimum internal temperature of 160 degrees, 25-30 minutes.
Carefully remove tray from oven.To serve, toss green beans with salsa (to taste) and garnish with chipotle crema. Bon appétit!
