Cooking Guidelines

    Prepare the Ingredients

    Preheat the oven to 400 degrees and prepare a baking sheet with foil or use a nonstick baking sheet. Lightly grease an oven-safe pan, pie pan, or casserole dish with cooking spray. Thoroughly rinse produce and pat dry. Scrub and finely slice fingerling potatoes into thin rounds. Remove the white, woody ends from asparagus and dice. Halve cherry tomatoes. Peel shallot. Julienne one half (cut into thin strips) and cut other half into a fine dice. Stem tarragon and finely chop. Remove the membrane (spiny white innards), seeds, and stem from bell pepper and cut into a dice. Chop frisee into bite-sized pieces. Let the butter come to room temperature.

    Cook the Bacon

    Place the bacon on a baking sheet. Bake in the oven for 8-10 minutes, or until crispy and golden brown. Place bacon on a paper towel-lined plate to soak up excess drippings.

    Assemble the Frittata

    In a medium pan (or prepared oven safe pan if that's what you're using), warm 1 tsp. olive oil. Once warm, add the julienned shallot, asparagus, potatoes, and diced bell pepper and cook until aromatic, about 4-5 minutes. In a mixing bowl, whisk together the liquid eggs, heavy cream, Swiss cheese, tarragon, half the Dijon mustard, and a pinch of salt and pepper. Spread out sautéed vegetables in the prepared casserole dish, oven safe pan or pie pan. Cover vegetables with the liquid egg mixture. Place in oven to bake for 20-25 minutes, or until firm and toothpick comes out cleanly from the center. Keep warm until ready to serve.

    Prepare the Salad

    In a clean mixing bowl, combine the diced shallot, remaining Dijon mustard, champagne vinegar, and a pinch of salt and pepper. Whisk until smooth. Add the frisee and tomatoes to the dressing and toss. Chill until ready to serve.

    Toast Muffins; Make Maple Butter

    Split the English muffins. Using a toaster or in the oven for a few minutes, toast the English muffins to desired crispness. In a clean mixing bowl, combine the softened butter, maple syrup, and a pinch of salt. Mash together until smooth. Place in a ramekin in the refrigerator to firm up a bit before serving.

    Plate the Dish

    Cut frittata into triangular, pie-shaped pieces. Place a hearty slice of frittata on the plate. Add a serving of salad on the side. Nestle 3 strips of bacon next to the frittata. Place two toasted English muffin halves on the plate. Slather muffins with maple-butter. Place extra butter and muffin halves on the side for second helpings.
