Cook Beef & Noodles
In a large sauce pan over medium high heat, cook ground beef. Transfer to a bowl and set aside.
Cook noodles according to package directions. Drain and rinse noodles under cold water. Reserve ½ cup of pasta water.
In the same pan, add 1 tsp olive oil and bok choy bottoms. Cook for 2 minutes. Add onions and green onion bottoms. Cook 2 minutes. Add garlic and bok choy tops.
Finish The Dish
Add beef, noodles, peanuts, and szechuan sauce to the pan and toss to coat. Garnish with green onion tops and sesame seeds. Add pasta water if the sauce is too thick.
