If using whole chicken breasts, pat dry and, on a clean cutting board, cut into 1” dice. Follow same instructions as shrimp in Steps 2 and 3, baking uncovered in hot oven until chicken reaches minimum internal temperature, 20-25 minutes.

If using steak strips, spread into a single layer, pat dry, and coarsely chop. Follow same instructions as shrimp in Steps 2 and 3, baking uncovered in hot oven until steak reaches minimum internal temperature, 12-14 minutes. Rest, 3 minutes.

Start the Peppers
Turn oven on to 400 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Combine diced peppers and 1 tsp. olive oil in provided tray. Spread into an even layer.Bake uncovered in hot oven until peppers begin to soften, 8-10 minutes.While peppers cook, continue recipe. -
Make Slaw and Add Shrimp
Halve lemon. Cut one half into wedges and juice other half.
Combine slaw mix, remoulade, and 1 tsp. lemon juice in a mixing bowl.Carefully remove tray from oven.Pat shrimp dry. Add shrimp and corn to tray and stir to combine. Tray will be hot! Use a utensil. -
Bake the Meal
Bake uncovered in hot oven until shrimp reach a minimum internal temperature of 145 degrees, 10-15 minutes.
Carefully remove tray from oven. Add pesto, Cajun seasoning, and a pinch of pepper. Stir to combine.Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.To serve, fill tortillas with shrimp mixture and top with slaw and crispy red peppers. Squeeze lemon wedges over meal to taste. Bon appétit!
