If using antibiotic free chicken, follow same instructions.

If using filets mignon or sirloin steaks, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Cook, skin-side up first, in a medium non-stick pan with 2 tsp. olive oil over medium heat until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Prepare the Ingredients
Cut potatoes into 1/2" pieces.
Halve tomatoes. If you receive one whole tomato instead, not to worry; simply core tomato, cut into 1/2" dice, and proceed with recipe instructions.Pat chicken dry. Season both sides with garlic and parsley seasoning and a pinch of salt and pepper. -
2 Roast the Potatoes and Chicken
Place potatoes on one half of prepared baking sheet. Toss with 1 tsp. olive oil, garlic salt, and a pinch of pepper. Spread into an even layer on their side.
Place chicken on empty side of sheet and evenly top with 1 tsp. olive oil.Roast in hot oven until potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.Carefully remove from oven. Stir half the softened butter (reserve remaining for sauce) into potatoes. Sheet will be hot! Use a utensil.While potatoes and chicken roast, continue recipe. -
3 Make the Sauce
In a microwave-safe bowl, combine remaining softened butter, creme fraiche, pesto, and 2 tsp. water.
Microwave uncovered until heated through, 45-60 seconds.Carefully remove from microwave and stir to combine.If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached.While sauce microwaves, continue recipe. -
4 Assemble Salad and Finish Dish
In a mixing bowl, combine spring mix, tomatoes, and dressing.
Plate dish as pictured on front of card, topping chicken with sauce. Bon appétit!
