If using ground beef, bake uncovered in hot oven until meatballs reach minimum internal temperature, 20-25 minutes.

If using ground turkey, bake uncovered in hot oven until meatballs reach minimum internal temperature, 22-25 minutes.

1 Prepare the Ingredients
Place carrots and 1 tsp. water in a microwave-safe bowl. Cover with a damp paper towel. Microwave covered until carrots are slightly tender, 3-5 minutes.
While carrots microwave, in a mixing bowl, combine panko and 2 Tbsp. water. Let sit, 1 minute.After 1 minute, add ground pork, half the ramen base (reserve remaining for post-bake), and a pinch of salt and pepper. Mix until completely combined. Form mixture into 8 equally-sized meatballs.Carefully remove carrots from microwave. Drain any excess liquid, if desired. Transfer carrots to provided tray. Wipe bowl clean and reserve. Stir bok choy, 2 tsp. olive oil, and a pinch of salt into carrots until combined. Spread into a single layer.Evenly top vegetables with meatballs and 2 tsp. olive oil. -
2 Bake the Meal
Bake uncovered in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.
Carefully remove tray from oven. Drain any excess liquid, if desired. Tray will be hot! Use caution.Stir in teriyaki sauce, remaining ramen base, and Sriracha (to taste) until combined. Tray will be hot! Use a utensil.While meal bakes, continue recipe. -
3 Heat Rice and Finish Meal
Carefully massage rice in bag to break up any clumps and remove from packaging.
Place rice in reserved microwave-safe bowl. Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Rest, 2 minutes.Stir in half the sesame oil (to taste; remaining is yours to use as you please!) and 1/4 tsp. salt. Fluff rice with a fork.To serve, top rice with vegetables (to taste), then meatballs (to taste). Garnish with sesame seeds. Bon appétit!
