If using ground turkey, cook until patties reach minimum internal temperature, 6-8 minutes per side.

1 Roast the Fries
Cut potatoes into 1/4" fries and pat dry.
Place fries, 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper on prepared baking sheet. Massage oil and seasonings into fries. Spread into a single layer.Roast in hot oven until slightly browned, 28-30 minutes, tossing fries halfway through.Carefully remove from oven. Stir in piri piri seasoning (to taste) until coated. Sheet will be hot! Use a utensil.While fries roast, continue recipe. -
2 Prepare Ingredients and Make Sauce
Drain pineapples in a colander/strainer and finely chop.
Peel and halve shallot. Slice thinly.In a mixing bowl, combine BBQ sauce and pesto (to taste). Set aside.Form ground beef into 2 equally-sized patties, 5" across. Season both sides with 1/4 tsp. salt and a pinch of pepper. -
3 Toast the Buns
Spray cut-side of buns with cooking spray.
Place a large non-stick pan over medium heat.Add buns, cut-side down, to hot, dry pan. Toast until slightly browned, 1-2 minutes.Transfer buns to a plate. Keep pan over medium heat. -
4 Cook the Pineapple and Shallots
Add 1 Tbsp. olive oil, pineapples, and shallots to hot pan. Stir occasionally until slightly browned, 3-5 minutes.
Add 1/4 cup water and bring to a simmer.Once simmering, reduce heat to medium- low. Stir occasionally until water is almost all evaporated and slightly thickened, 10-12 minutes.If pan is dry, add additional water, 1 Tbsp. at a time, as needed.Remove from burner.While pineapples and shallots cook, continue recipe. -
5 Cook Patties and Finish Dish
Summertime, and the grilling is easy! To grill this burger, heat grill to medium. Follow same instructions, grilling until browned and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.
Place a medium non-stick pan over medium-high heat. Add patties to hot pan. Cook until slightly charred and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.Remove from burner. Evenly top patties with cheese (to taste). Cover until cheese is melted.Plate dish as pictured on front of card, topping bottom bun with patty, pineapple-shallot mixture, sauce (to taste), tortilla strips, then top bun. Bon appétit!
