1 Prepare the Ingredients
Hold lettuce at root end and chop coarsely.
Remove stem, seeds, and ribs, and cut bell pepper into 1/4" dice.Trim and thinly slice green onions on an angle, keeping white and green portions separate. -
2 Prepare the Tofu
Line a plate with paper towels.
Drain tofu and place on towel-lined plate. Top with paper towels, pressing gently but firmly to remove excess moisture.Using hands, crumble tofu into bite-sized pieces. -
3 Cook the Bell Peppers
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.
Add bell peppers, white portions of green onions, and a pinch of salt and pepper to hot pan. Stir occasionally until tender, 6-8 minutes. -
4 Add the Tofu and Sauce
Kids not a fan of extra heat? Feel free to skip/reduce the taco seasoning. Add 2 tsp. olive oil, tofu, garlic salt, and half the taco seasoning (to taste; reserve remaining for rice) to hot pan. Stir occasionally until tofu is heated through, 6-8 minutes.

5 Heat Rice and Tortillas and Finish Dish
Carefully massage rice in bag to break up any clumps.
Kids not a fan of extra heat? Feel free to skip/reduce the taco seasoning. In a microwave-safe bowl, combine rice, remaining taco seasoning (to taste), 1 Tbsp. butter, and a pinch of salt. Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Stir in green portions of green onions. Rest, 2 minutes. Fluff rice with a fork.Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded. Microwave until heated through, 30-60 seconds.Carefully remove from microwave.Plate dish as pictured on front of card, filling tortillas with tofu mixture (to taste), lettuce, cheese, sour cream, then tortilla strips.
