1 Make Meatloaves and Prepare Broccoli
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
Break broccoli into bite-sized pieces using hands.Place broccoli in one provided tray. Top with 2 tsp. olive oil and garlic salt. Massage oil and seasoning into broccoli. In a mixing bowl, combine ground turkey, cheese, ranch seasoning, half the sour cream (reserve remaining for potatoes), and a pinch of pepper. Form mixture into four equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place loaves in second provided tray. -
2 Bake the Meal
Bake both trays uncovered in hot oven until broccoli is tender and meatloaves reach a minimum internal temperature of 165 degrees, 20-25 minutes.
Carefully remove trays from oven. Drain excess liquid from meatloaf tray. Tray will be hot! Use a utensil. Stir butter and lemon juice into broccoli.Top meatloaves with Sicilian sauce. Rest until sauce has melted, 2-3 minutes. While meal bakes, continue recipe. -
3 Heat the Mashed Potatoes
In a microwave-safe bowl, combine mashed potatoes (no need to drain) and 1/4 tsp. salt. Vigorously stir to combine. Microwave until heated through, 2-3 minutes.
Carefully remove from microwave. Add remaining sour cream and stir to combine. To serve, top meatloaves with remaining sauce from tray. Bon appétit!
