  • 1 Small Pot
  • 1 Large Non-Stick Pan
  • 1 Microwave
  • 1 9" x 13" Casserole Dish
  • 1 Colander/Strainer

Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

    Cook the Rice

    Bring a small pot with rice, adobo seasoning, 1/4 tsp. salt, and 1 1/4 cups water to a boil.

    Once boiling, reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.

    Remove from burner. Set aside and cover to keep warm.

    While rice cooks, continue recipe.

    Start the Filling

    Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.

    Add ground turkey, chile and cumin rub, and 1/4 tsp. salt to hot pan. Break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 7-9 minutes.

    Finish the Filling

    Drain and rinse beans in a colander/strainer.

    Kids not a fan of extra heat? Feel free to skip/reduce the enchilada sauce.

    Add beans, corn, and 1/4 the enchilada sauce (to taste; reserve remaining for topping) to hot pan. Stir to combine and bring to a simmer.

    Once simmering, remove from burner.

    Assemble the Burritos

    Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded.

    Microwave until heated through, 30-60 seconds.

    Carefully remove from microwave and transfer tortillas to a clean, flat work surface.

    Evenly divide filling between tortillas, placing in center. Top filling with 1/3 the cheese (reserve remaining for topping). Fold sides of tortilla toward center, then roll bottom edge towards the top, enclosing sides tightly.

    Broil Burritos and Finish Dish

    Place burritos, seam-side down, in prepared casserole dish. Evenly top with remaining enchilada sauce (to taste), then remaining cheese.

    Broil under hot broiler until cheese is melted and slightly browned, 2-3 minutes.

    Don't text and broil! Keep an eye on oven as cheese may burn easily under broiler. Carefully remove from oven.

    Plate dish as pictured on front of card, topping burrito with sour cream. Halve burrito, if desired. Bon appétit!
