When water's boiling, add macaroni to the pot. Cook until al dente and then drain. In a medium pan, melt 1 Tbsp. of butter over medium heat. Once warm, add breadcrumbs and completely coat with melted butter. Cook 3-4 minutes, or until browned and toasted. Remove from pan until ready to assemble mac and cheese.

  • Step 3 - Prepare Cheese Sauce

While pasta is boiling, melt remaining butter in separate pot. Whisk in the flour and mustard powder and stir for about five minutes to create a roux. Stir until it's free of lumps. Stir in milk, ½ cup of water, diced onion, and paprika. Simmer for ten minutes. Stir in ¾ of the cheese. Add salt and pepper to taste.

  • Step 4 - Assemble and Bake the Mac

Fold macaroni into the sauce, ensuring it's completely coated. If more viscosity is needed, slowly add ½ cup of water as needed. Add salt and pepper to taste. Pour mac and cheese into the greased casserole dish. Top with breadcrumbs and remaining cheese. Place in oven to bake for 30 minutes. Remove from oven and rest for five minutes before serving.
