Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Prepare the Ingredients

    Preheat oven to 350 degrees and lightly grease a casserole dish with olive oil. Bring a large pot of salted water to a boil. Peel and cut onion into a fine dice. Rinse and finely chop the parsley.

    Cook Pasta and Prepare Breadcrumbs

    When water's boiling, add macaroni to the pot. Cook until al dente and then drain.

    In a medium pan, melt 1 Tbsp. of butter over medium heat. Once warm, add breadcrumbs and completely coat with melted butter. Cook 3-4 minutes, or until browned and toasted. Remove from pan until ready to assemble mac and cheese.

    Prepare Cheese Sauce

    While pasta is boiling, melt remaining butter in separate pot. Whisk in the flour and mustard powder and stir for about five minutes to create a roux. Stir until it's free of lumps. Stir in milk, ½ cup of water, diced onion, and paprika. Simmer for ten minutes. Stir in ¾ of the cheese. Add salt and pepper to taste.

    Assemble and Bake the Mac

    Fold macaroni into the sauce, ensuring it's completely coated. If more viscosity is needed, slowly add ½ cup of water as needed. Add salt and pepper to taste. Pour mac and cheese into the greased casserole dish. Top with breadcrumbs and remaining cheese. Place in oven to bake for 30 minutes. Remove from oven and rest for five minutes before serving.

    Plate the Dish

    Ladle a serving of mac and cheese onto a plate. Garnish with a crack of fresh black pepper and parsley.
