A note about serious food allergies

After you take a bite of this, you'll wish all burgers were California burgers. After all, East Coast burgers may be hip, and Midwest burgers may make you feel alright, but they don't have rich avocado sitting on top of the patty, and that patty on a creamy aioli of tart tomato. We've been all around this great big world, tasted all the burgers. Well, you know the rest.

  1. 1

    Bake the Fries

Cut potatoes into ¼"-thick fries and pat dry.

Place fries on prepared baking sheet and toss with 2 tsp. olive oil, a pinch of salt, and a pinch of pepper.

Spread into a single layer and bake in hot oven until lightly browned, 25-28 minutes, tossing fries halfway through.

Carefully remove from oven. Toss baked fries with truffle salt. Baking sheet will be hot! Use a utensil.

    While fries bake, prepare ingredients.

  2. 2

    Prepare Ingredients and Make Aioli

Halve avocado and remove pit by carefully tapping pit with the blade of your knife so it sticks. Gently twist knife to release pit. Scoop out the flesh with a spoon. Cut into 1/4" slices.

Combine mayonnaise, pesto, lemon juice, and a pinch of salt in a mixing bowl. Set aside.

  3. 3

    Form and Cook Patties

Form ground beef into two patties, about 5" in diameter. Season both sides with black garlic seasoning and a pinch of salt and pepper.

Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.

Add patties to hot pan. Cook until lightly charred and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.

Remove from burner. Transfer patties to a plate. Wipe pan clean and reserve.

  4. 4

    Toast the Buns

Return pan used to cook burgers to low heat.

Add buns, cut side down, to hot, dry pan. Toast buns until lightly browned, 2-3 minutes.

    Remove from burner.

  5. 5

    Finish the Dish

Plate dish as pictured on front of card, spreading aioli on bottom bun and topping with patty, avocado, arugula, and top bun. Bon appétit!
