Vietnamese cuisine has many great delights, including the noble Banh Mi, and phantastic pho. (Yes, we stand by what we just did there.) The pho flavor is out in phorce here, mixing in with ground turkey, garlic, ponzu, slaw, and edamame. That mixture fills the crunchy lettuce cups with something so good, you'll do back phlips. If using 20 oz. ground turkey, follow same instructions as 10 oz. ground turkey, working in batches if necessary.

If using ground beef, follow same instructions as ground turkey in Step 1, breaking up burger until beef reaches minimum internal temperature, 4-6 minutes.

If using Impossible burger, follow same instructions as ground turkey in Step 1, breaking up burger until heated through, 4-6 minutes.

If using shrimp, pat dry. Follow same instructions as ground turkey in Step 1, cooking until shrimp reach minimum internal temperature, 2-3 minutes per side.

Start the Filling
Heat 2 tsp. olive oil in a medium non-stick pan over medium-high heat.
Add ground turkey and a pinch of salt to hot pan. Break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 7-9 minutes.While turkey cooks, prepare ingredients. -
Prepare the Ingredients
Separate leaves of lettuce for cups. Slight browning on the outer leaves of lettuce is normal and safe to eat, but can be trimmed if desired.
Trim and thinly slice green onions on an angle, keeping white and green portions separate.Mince garlic. -
Finish the Filling
Add slaw mix, edamame, garlic, white portions of green onions, 1/4 tsp. salt, and a pinch of pepper to hot pan. Stir occasionally until slaw mix is slightly softened, 2-3 minutes.
Add pho concentrate, 2 Tbsp. water, and ponzu. Stir occasionally until liquid is slightly reduced, 2-3 minutes.Remove from burner. -
Assemble Cups and Finish Dish
In a mixing bowl, combine mayonnaise, gochujang (to taste), a pinch of salt, and 1 tsp. water. Mix well.
Place a lettuce cup on a clean work surface (or layer two cups for extra crunch and structural support). Fill with a few spoonfuls of filling.Repeat for about five more lettuce cups.Plate dish as pictured on front of card, garnishing cups with green portions of green onions and gochujang-mayonnaise (to taste).
