A note about serious food allergies

Vietnamese cuisine has many great delights, including the noble Banh Mi, and phantastic pho. (Yes, we stand by what we just did there.) The pho flavor is out in phorce here, mixing in with ground turkey, garlic, ponzu, slaw, and edamame. That mixture fills the crunchy lettuce cups with something so good, you'll do back phlips. Too far. We know.

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Start the Filling

    Heat 2 tsp. olive oil in a medium non-stick pan over medium-high heat.

    Add ground turkey to hot pan. Break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 7-9 minutes.

    While turkey cooks, prepare ingredients.

    Prepare the Ingredients

    Separate leaves of lettuce for cups. Slight browning on the outer leaves of lettuce is normal and safe to eat, but can be trimmed if desired.

    Trim and thinly slice green onions.

    Mince garlic.

    Finish the Filling

    Add slaw mix, edamame, garlic, 1/4 tsp. salt, and a pinch of pepper to hot pan. Stir occasionally until slaw mix is slightly softened, 2-3 minutes.

    Add pho concentrate, 1/4 cup water, and ponzu. Stir occasionally until liquid is slightly reduced, 2-3 minutes.

    Remove from burner.

    Assemble Cups and Finish Dish

    In a mixing bowl, combine mayonnaise, gochujang (to taste), and 1 tsp. water. Mix well.

    Place a lettuce cup on a clean work surface (or layer two cups for extra crunch and structural support). Fill with a few spoonfuls of filling.

    Repeat for about five more lettuce cups.

    Plate dish as pictured on front of card, garnishing cups with green onions and gochujang-mayonnaise (to taste). Bon appétit!
