1 Prepare the Chicken
Finely crush walnuts.
Combine walnuts and pankoon a plate and spread into an even layer.Pat chicken dry. Season both sides with rotisserie chicken seasoning, 1/4 tsp. salt, and a pinch of pepper. Evenly spread mayonnaise on one side of chicken. Place chicken, mayonnaise-side down, onto plate with walnut-panko mixture, pressing gently to adhere. -
2 Bake the Vegetables and Chicken
Spray provided trays with cooking spray.
Place Brussels sprouts and carrot medley in one prepared tray and toss with 1 Tbsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into an even layer.Add chicken, walnut-panko-side up, to second prepared tray and spray with cooking spray.Bake both trays uncovered in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.Carefully remove trays from oven and drain any excess liquid. Stir softened basil pesto butter into vegetables until melted and combined. Trays will be hot! Use a utensil.While vegetables and chicken bake, continue recipe. -
3 Heat Mashed Potatoes, Make Apricot Glaze, and Finish Meal
Add mashed potatoes to a microwave-safe bowl and vigorously stir to combine. Microwave until heated through, 2-3 minutes.
Carefully remove from microwave and vigorously stir to combine. Set aside.In another microwave-safe bowl, combine 1/2 Tbsp. salted butter, apricot preserves, and 2 tsp. water. Microwave uncovered until butter is melted, 45-60 seconds.Carefully remove from microwave and stir to combine.To serve, top chicken with apricot glaze. Bon appétit!
