Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Start the Rice
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
In provided tray, combine rice, adobo seasoning, and 1 1/4 cups water.Bake uncovered in hot oven until water is almost completely absorbed, 10-15 minutes.While rice bakes, continue recipe. -
2 Add the Shrimp
Drain and rinse black beans.
Drain shrimp thoroughly and pat dry.Carefully remove tray from oven and push rice to one side.In now-empty side of tray, combine shrimp, beans, 1 tsp. olive oil, and fajita seasoning. Tray will be hot! Use a utensil.Cover rice side of tray with foil. -
3 Bake the Meal
Bake half covered (rice covered, shrimp uncovered) in hot oven until rice is tender and shrimp reach a minimum internal temperature of 145 degrees, 10-15 minutes.
While meal bakes, in a mixing bowl, combine slaw mix and dressing (to taste). Set aside.Halve lime.Carefully remove tray from oven.To serve, top rice with shrimp and bean mixture, slaw, sour cream, and crispy red peppers. Squeeze lime halves over to taste. Bon appétit!
