Start the Green Beans
Turn oven on to 400 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh ingredients and pat dry.
Combine green beans, 1 tsp. olive oil, and a pinch of salt and pepper in provided tray.Cover tray with foil. Bake covered in hot oven, 15 minutes.While green beans bake, make meatloaves.
Make and Add the Meatloaves
In a mixing bowl, combine ground turkey, garlic salt, a pinch of salt, and 1 tsp. olive oil. Form into two equally-sized loaves.
Carefully, remove tray from oven. Remove foil. Push green beans to one side. Tray will be hot! Use a utensil.Place meatloaves in empty space in tray.
Bake the Meal
Cover green bean side of tray with foil, leaving loaves uncovered. Bake in hot oven until green beans are tender and loaves reach a minimum internal temperature of 165 degrees, 20-25 minutes.
While meal bakes, combine apricot preserves, lemon juice, and mustard in another mixing bowl.Carefully remove tray from oven. Transfer meatloaves and green beans to plate. To serve, slice meatloaves, if desired, and top with apricot-mustard mixture. Combine green beans with garlic butter and top with goat cheese (crumbling if needed) and pecans. Bon appétit!
