A note about serious food allergies

Bahn mi is for bah-gettes, right? That's tradition. Well, tradition shamadition. Delicious pork, formed into a perfect patty, cooked just right, and topped with crunchy, quick-pickled cucumber and a yummy aioli dashed with spicy Sriracha… it may not be for purists, but it is for those of us that love pure flavor.

  1. 1

    Roast the Fries

Cut potatoes into 1/2" fries and pat dry.

Place fries on prepared baking sheet and toss with 2 tsp. olive oil and a pinch of salt and pepper.

Spread into a single layer. Roast in hot oven until lightly browned, 25-30 minutes, tossing fries halfway through.

Carefully remove baking sheet from oven. Transfer fries to a mixing bowl and gently combine with Asian garlic, ginger, and chile seasoning (to taste). Fries will be hot! Use a utensil.

    While fries roast, continue recipe.

  2. 2

Prepare Ingredients and Make Sriracha Aioli

Trim cucumber, halve, and thinly slice on an angle.

    Stem and coarsely chop cilantro.

In another mixing bowl, combine Sriracha (to taste) and mayonnaise. Set aside.

In a microwave-safe bowl, combine rice vinegar and a pinch of salt. Microwave until hot, 15-30 seconds.

Add cucumber to bowl with vinegar. Cover with plastic wrap and set aside to quick-pickle, at least 10 minutes.

    While cucumber quick-pickles, continue recipe.

  3. 3

    Form the Patties

In another mixing bowl, combine ground pork, ginger, 1/4 tsp. salt, and a pinch of pepper. Form into two equally-sized patties, about 5" in diameter, and season with a pinch of salt.

  4. 4

    Toast Buns and Cook Patties

Place a large non-stick pan over medium-high heat.

Add buns to hot, dry pan, cut-side down, and toast until golden-brown, 1-2 minutes.

Transfer buns to a plate. Keep pan over medium-high heat.

Add 1 tsp. olive oil and patties to hot pan. Cook until browned and pork reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.

    Remove from burner.

  5. 5

    Finish the Dish

Plate dish as pictured on front of card, topping bottom bun with Sriracha aioli, patty, cucumbers, cilantro, and top bun. Bon appétit!
