  1. 1

    Prepare and Stuff the Chicken

Pat chicken breasts dry. Cover chicken with plastic wrap and pound with a heavy object to an even 1/8" thickness.

Remove plastic wrap and season chicken on both sides with a pinch of salt and pepper.

Top pounded chicken evenly with bacon and cheese, leaving 1/2" border. Fold chicken in half over filling, pressing edges to seal.

  2. 2

    Bake the Chicken

Place stuffed chicken on a prepared baking sheet.

Bake in hot oven, 15 minutes.

Carefully remove from oven. Top chicken evenly with BBQ sauce.

Bake again until chicken reaches a minimum internal temperature of 165 degrees, 10-12 minutes.

While chicken bakes, prepare and cook potatoes.

  3. 3

    Prepare the Potatoes

Halve potatoes, then place cut side down. Cut into 1/4" slices.

  4. 4

    Cook the Vegetables

Place a large non-stick pan over medium heat. Add 1 Tbsp. olive oil and potatoes to hot pan. Stir occasionally until potatoes are tender and browned, 10-12 minutes.

Stir in peas and seasoning blend until peas are heated through, 1-2 minutes.

    Remove from burner.

  5. 5

    Finish the Dish

Plate dish as pictured on front of card, slicing chicken if desired. Bon appétit!
