If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using cooked beef brisket, separate pieces. Cook in a medium non-stick pan with 2 tsp. olive oil and stir occasionally until brisket is heated through, 4-6 minutes.

1 Bake the Corn
Place half the butter (reserve remaining for post-bake) in a microwave-safe bowl. Microwave uncovered until melted, 20-30 seconds.
Carefully remove from microwave.Place each ear of corn on a piece of foil and evenly top with melted butter and a pinch of salt and pepper. Massage butter and seasonings into corn, then form a foil pouch around corn. Place pouches directly on oven rack, opening-side up.Bake in hot oven until tender, 20-25 minutes.Carefully remove from oven and let cool, 5 minutes.Once cool enough to handle, carefully open foil pouches to release steam. Evenly top corn with remaining butter. Steam and corn will be hot! Use caution/a utensil.While corn bakes, continue recipe. -
2 Prepare the Ingredients
Trim and thinly slice green onions, keeping white and green portions separate.
Place mashed potatoes in one half of prepared tray. Vigorously stir to combine and spread into an even layer on their side. Evenly top with cheese.Pat steak strips dry. Coarsely chop, then separate pieces. Season all over with garlic salt, 1/4 tsp. pepper, and 1 tsp. olive oil.Add steak strips, white portions of green onions, and half the BBQ sauce (reserve remaining for garnish) to empty side of tray. Stir to combine and spread into an even layer on their side. -
3 Finish the Meal
Bake uncovered in hot oven until mashed potatoes are heated through and steak strips reach a minimum internal temperature of 145 degrees, 13-18 minutes.
Carefully remove from oven. Rest, 3 minutes.To serve, top steak strips with remaining BBQ sauce and garnish steak strips and mashed potatoes with green portions of green onions. Bon appétit!
