Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Prepare the Potatoes
Prick potatoes all over with a fork.
Place potatoes in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until slightly tender, 4-6 minutes.Carefully remove from microwave. Transfer potatoes to a clean, flat work surface. Using the flat side of an object, press down gently to smash each potato until 1/2" thick. Season all over with 2 tsp. olive oil and potato spice seasoning.Place potatoes on one side of provided tray. -
2 Add Brisket and Bake Meal
Drain brisket and separate slices.
Place brisket in empty side of tray and toss with BBQ sauce. Spread into an even layer and cover brisket side with foil.Bake half-covered (brisket covered, potatoes uncovered) in hot oven until potatoes have browned and brisket is heated through, 14-15 minutes.Carefully remove from oven. Evenly top potatoes with cheese.Bake again half-covered in hot oven until cheese is melted, 3-5 minutes.Carefully remove from oven.While meal bakes, continue recipe. -
3 Heat Buns, Prepare Green Onions, and Finish Meal
Heat buns to your preference using a toaster or microwave.
Alternatively, place buns directly on rack in hot oven, cut-side up. Toast until lightly browned, 3-4 minutes.While buns heat, trim and thinly slice green onions.To serve, top bottom bun with mustard (to taste), brisket, arugula, then top bun. Garnish potatoes with sour cream and green onions. Bon appétit!
