Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Prep

    Trim and thinly slice green onions on an angle, keeping white and green portions separate.

    Combine tomato sauce and taco seasoning. Stir to incorporate.

    Stem poblano peppers, seed, and cut into 1/2" dice. Wash hands and cutting board after prepping. (Time: 1:11)

    Drain black beans

    In a mixing bowl, combine arepa mix, the cheese, 2 TB of tomato sauce mixture, 1/4 tsp. salt and a pinch of pepper. Stir in 1/2 cup cold water. Set aside, 5 minutes.

    Cook Meat Mixture

    "Place a large non-stick pan over medium-high heat.

    Add ground beef to hot pan. Cook, breaking up meat, until no pink remains, 4-6 minutes. Add poblanos and tomato sauce mixture. Cook for 2-3 minutes. Transfer to a plate.

    Cook Black Beans

    In the same pan, add 1 tsp olive oil. Add green onion bottoms and demi. Bring to a simmer. Add beans and toss to combine. Add 1/4 cup water and bring to a simmer. Transfer mixture to a bowl.

    Make The Arepas

    From arepa mixture into four patties, approximately 3" in diameter.

    Place a large non-stick pan over medium heat and add 1 Tbsp. olive oil.

    Add arepa patties to hot pan and cook until golden brown, 2-3 minutes per side.

    Finish The Dish

    Plate dish as pictured on front of card, topping arepas with sour cream and beef mixture and garnishing with green onion tops. Bon appétit!
