If using diced chicken breasts, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes.

If using steak strips, pat dry, coarsely chop, then separate pieces. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until steak strips reach minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

1 Start the Vegetables and Shrimp
Prick potatoes all over with a fork.
Place potatoes in a microwave-safe bowl and cover with a damp paper towel.Microwave covered until tender, 6-8 minutes.While potatoes microwave, pat shrimp dry.Carefully remove potatoes from microwave. Place potatoes, shrimp, and bell peppers in provided tray. Toss with 2 tsp. olive oil and 1/4 tsp. salt. Spread into a single layer. Potatoes will be hot! Use caution.Bake uncovered in hot oven, 10 minutes.Shrimp will finish cooking in a later step. -
2 Add Corn and Bake Meal
After 10 minutes, carefully remove tray from oven and drain any excess liquid. Tray will be hot! Use caution.
Stir in corn, Chesapeake seasoning, and a pinch of salt until combined. Evenly top with plain butter.Bake uncovered in hot oven until potatoes are browned and shrimp reach a minimum internal temperature of 145 degrees, 10-15 minutes.Carefully remove from oven and stir to combine.While meal bakes, continue recipe. -
3 Toast Garlic Bread, Make Crema, and Finish Meal
Separate ciabatta and evenly spread softened roasted garlic and herb butter on cut sides.
Place ciabatta, cut-sides up, directly on oven rack in hot oven. Toast until golden-brown, 5-7 minutes.While ciabatta toasts, halve lemon lengthwise and cut into wedges.Stem and tear parsley.In a mixing bowl, combine mayonnaise and 1 tsp. water. Set aside.To serve, top shrimp mixture with crema and garnish with parsley. Squeeze lemon wedges over to taste. Bon appétit!
