If using antibiotic free chicken, follow same instructions.

1 Prepare the Chicken
Combine panko and half the cheese (reserve remaining for garnish) on a plate and spread into an even layer.
Pat chicken dry and season both sides with rotisserie chicken seasoning and a pinch of salt and pepper. Evenly spread mayonnaise on one side.Place chicken, mayonnaise-side down, onto plate with panko mixture, pressing gently to adhere. -
2 Start the Chicken
Place chicken on one half of prepared baking sheet and spray with cooking spray.
Roast in hot oven, 10 minutes.Chicken will finish cooking in a later step.While chicken roasts, continue recipe. -
3 Add the Vegetables
Prick tomatoes all over with a fork. If you receive one whole tomato instead, not to worry; simply core tomato, cut into 1/2" dice, and proceed with recipe instructions.
In a mixing bowl, combine tomatoes, zucchini, onions, lemon n herb seasoning, chimichurri seasoning, a pinch of salt, and 2 tsp. olive oil. Set aside.After 10 minutes, carefully remove sheet from oven. Add vegetables to empty side of sheet and spread into an even layer on their side. Sheet will be hot! Use a utensil. -
4 Finish Vegetables and Chicken and Finish Dish
Roast in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 8-10 minutes.
While vegetables and chicken roast, in a microwave-safe bowl, combine pesto, creme fraiche, and 2 tsp. water. Microwave uncovered until heated through, 30-60 seconds.Carefully remove from microwave and stir to combine.Carefully remove sheet from oven.To serve, top chicken with sauce. Slice chicken, if desired. Garnish vegetables with remaining cheese. Bon appétit!
