Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

1 Start the Chili
Place a large pot over medium-high heat.
Add ground beef, onions, and 1/4 tsp. salt to hot, dry pot. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Drain any excess liquid from pot. Pot will be hot! Use caution. -
2 Finish the Chili
Drain and rinse beans in a colander/strainer.
Add taco seasoning, chili powder (to taste), 1/4 tsp. salt, 1/4 tsp. pepper, tomatoes, beans, chicken base, corn, green chiles (to taste), and 1 cup water to hot pot. Stir to combine and bring to a simmer. Kids not a fan of extra heat? Feel free to skip/reduce the chili powder and/or green chiles.Once simmering, stir occasionally until corn and beans are heated through, 4-6 minutes.Remove from burner.While chili cooks, continue recipe. -
3 Make the Johnny Cake Batter
In a mixing bowl, combine corn muffin mix and 3/4 cup water.
Stir until mixture reaches the consistency of pancake batter. If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached. -
4 Cook Johnny Cakes and Finish Dish
Place a large non-stick pan over medium heat and spray with cooking spray.
Working in batches, add four separate 1/4 cup scoops of batter to hot pan. Cook undisturbed until bubbles form on surface and bottom is lightly browned, 2-3 minutes.Gently flip and cook undisturbed again until cooked through and lightly browned, 2-3 minutes.Replenish cooking spray, if necessaryRemove from burner. Transfer to a plate.Plate dish as pictured on front of card, topping chili with cheese. Bon appétit!
