Prepare the Ingredients
Trim and thinly slice green onions on an angle, keeping white and green portions separate.
Stem poblano pepper, seed, and cut into ½" dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping.
Cook the Ground Beef
Place a large non-stick pan over medium-high heat. Add ground beef to hot, dry pan.
Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.
Transfer ground beef to a plate. Keep pan over medium-high heat.
Cook the Peppers
Add poblano and white portions of green onions to hot pan. Stir often until lightly browned, 3-4 minutes.
Add ground beef, seasoning blend, demi-glace, and 1 tsp. water. Stir until combined and warmed through, 1-2 minutes.
Remove from burner.
Make the Sauce
Place 1 tsp. butter(not included in your box) in a small pot over medium heat. Let melt.
Once butter has melted, add 2 tsp. flour(not included in your box). Stir often until a golden brown paste forms, 3-5 minutes.
Add ½ cup milk(not included in your box) and bring to a simmer. Once simmering, stir occasionally until thickened, 2-3 minutes.
Remove from burner and stir in cheese, ¼ tsp. salt, and a pinch of pepper until combined.
Finish the Dish
Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.
Plate as pictured on front of card, filling tortillas with ground beef and peppers, cheese sauce, green portions of green onions, and tortilla strips. Bon appétit!
