1 Cook the Onions
Peel and halve onion. Thinly slice halves.
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.Add onions to hot pan and stir occasionally until softened and browned, 10-12 minutes.If pan becomes dry, add water, 1 Tbsp. at a time, as needed.Add wine, garlic (prepared in a later step), half the thyme (prepared in a later step; reserve remaining for garnish), and a pinch of salt and pepper. Stir occasionally until wine evaporates and onions are caramelized, 3-5 minutes.Remove from burner.While onions cook, continue recipe. -
2 Prepare the Ingredients
Slice potatoes very thinly.
Place potatoes in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until potatoes are tender, 5-7 minutes.While potatoes microwave, stem and mince thyme.Mince garlic. -
3 Make the Sauce
Place a medium pot over medium heat.
Add 3/4 cup water to hot pot and bring to a simmer.Once simmering, whisk in cream cheese, seasoned salt, and 1/4 tsp. pepper until smooth and combined.Stir in half the cheddar and half the Parmesan (reserve remaining of both for topping) until melted and combined.Remove from burner. -
4 Bake Potatoes and Finish Dish
Place potatoes in prepared casserole dish and season with 1/2 tsp. salt. Gently stir in sauce and onion mixture until combined. Spread potato mixture into an even layer and cover with foil.
Bake covered in hot oven until sauce is bubbling, 14-16 minutes.Carefully remove from oven and remove foil. Top evenly with remaining cheddar, Parmesan, and thyme.Bake again uncovered in hot oven until cheese browns, 12-15 minutes.Carefully remove from oven. Rest, 5 minutes.Serve family-style. Bon appétit!
