1 Prepare the Vegetables
Drain potatoes in a colander/strainer.
In provided tray, combine potatoes, fajita seasoning, 1 tsp. olive oil, and a pinch of pepper. Push to one side of tray. Spread into an even layer on their side.Add poblanos (to taste) to empty side of tray and spread into an even layer on their side.Bake uncovered in hot oven, 15 minutes.While vegetables bake, continue recipe. -
2 Add the Pork
Pat sliced pork dry. Coarsely chop, then separate pieces.
After 15 minutes, carefully remove tray from oven.Add pork and garlic salt to poblanos and stir to combine. Tray will be hot! Use a utensil. -
3 Bake Meal, Toast Buns, and Finish Meal
Bake uncovered in hot oven, 15 minutes.
Carefully remove tray from oven. Top pork-poblano mixture with cheese.Bake tray uncovered in hot oven until buns are slightly golden-brown, potatoes are tender, and pork reaches a minimum internal temperature of 145 degrees, 3-5 minutes.Carefully remove from oven. Rest pork, 3 minutes.While meal bakes, heat buns to your preference using a toaster or microwave.Alternatively, place buns directly on rack in hot oven, cut-side up. Toast until lightly browned, 3-4 minutes.To serve, top bottom bun with pork-poblano mixture (to taste), dressing (to taste), crispy onions, then top bun. Bon appétit!
