1 Cook Pasta and Prepare Onion
Once water is boiling, add pasta and cook until al dente, 11-13 minutes.
Remove from burner. Reserve 1 cup pasta cooking water. Drain in a colander and set aside. While pasta cooks, halve and peel onion. Thinly slice halves. -
2 Cook the Vegetables
Place a medium non-stick pan over low heat and add 2 tsp. olive oil. Add onions, half the garlic salt (reserve remaining for chicken), and a pinch of pepper to hot pan. Stir occasionally until jammy and golden-brown, 20-30 minutes.
If pan becomes dry, add 1-2 Tbsp. water, if necessary.Stir in spinach until wilted, 1-2 minutes.Remove from burner. Transfer vegetables to a plate. While onions caramelize, continue recipe. -
3 Cook the Chicken
Pat chicken dry and season all over with remaining garlic salt and a pinch of pepper.
Place a large non-stick pan over medium heat and add 2 tsp. olive oil. Add chicken to hot pan. Stir occasionally until chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes.Remove from burner. Transfer chicken to a plate. Reserve pan; no need to wipe clean. -
4 Make the Sauce
Return pan used to cook chicken to low heat. Add butter to hot pan and let melt, 30-60 seconds.
Once melted, add flour and stir until no dry flour remains, 1-2 minutes.Whisk or vigorously stir in cream base and 1/2 cup pasta cooking water until smooth and combined. Bring to a simmer.Once simmering, stir occasionally until slightly thickened, 1-2 minutes.Remove from burner. Stir in cheese and 1/4 tsp. pepper until melted and combined. -
5 Broil Pasta and Finish Dish
Add pasta, chicken, and vegetables to pan with sauce and stir to coat.
If sauce is too thick, add additional reserved pasta cooking water, 1 Tbsp. at time, until desired consistency is reached. In a mixing bowl, combine panko and 2 tsp. olive oil.Transfer pasta-chicken mixture to prepared baking dish. Top evenly with panko mixture.Broil under hot broiler until golden-brown, 3-5 minutes.Don't text and broil! Keep an eye on oven as panko may burn easily under broiler. Carefully remove from broiler.Plate dish as pictured on front of card. Bon appétit!
