If using antibiotic free chicken breasts, follow same instructions.

1 Start the Carrots
Place carrots in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until tender, 4-6 minutes.
Carefully remove from microwave.Transfer carrots to provided tray and top with 2 tsp. olive oil, 1/4 tsp. salt, and 3/4 the piri piri seasoning (to taste; reserve remaining for butter). Stir to combine.Reserve bowl; no need to wipe clean. -
2 Add the Chicken
Push carrots to one side of tray.
Pat chicken dry and season both sides with a pinch of salt.Combine panko and smoked paprika on a plate and spread into an even layer. Place chicken onto panko mixture, pressing gently to adhere to one side.Add chicken, panko-side up, to now-empty side of tray. -
3 Bake Meal and Make Piri Piri Butter and Lime Aioli
Bake uncovered in hot oven until carrots are tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.
While meal bakes, zest and halve lime. Cut one half into wedges and juice the other half.In reserved bowl, combine softened butter and remaining piri piri seasoning (to taste). Set aside.In a mixing bowl, combine 1/2 tsp. lime zest, 1 tsp. lime juice, and mayonnaise. Set aside.Carefully remove tray from oven. Transfer chicken to another plate. Add honey to carrots and stir to combine.To serve, top chicken with piri piri butter (to taste) and garnish carrots with lime aioli and almonds. Squeeze lime wedges over to taste. Slice chicken, if desired. Bon appétit!
