    Make the Potato

    Thoroughly rinse produce and pat dry. Poke potato all over with a fork. Microwave until tender, 5-10 minutes. While potato cooks, tear or coarsely chop spinach. Place steak in a microwave-safe bowl. Microwave until warm, 1-2 minutes. Stir in sour cream, spinach, and chimichurri to cooked steak. Carefully slice open potato. Place butter inside potato and top with steak mixture and Parmesan. Bon appétit!
