Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

1 Start the Vegetables
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat and seafood. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
In provided tray, combine corn, poblanos (to taste), garlic salt, and 2 tsp. olive oil.Bake uncovered in hot oven until poblanos are tender, 12-15 minutes.While vegetables bake, continue recipe. -
2 Add the Beans and Salmon
Drain beans.
Pat salmon dry and season flesh side with fiesta seasoning.After 12-15 minutes, carefully remove tray from oven. Drain any excess liquid. Add beans and stir to combine. Push to one side of tray. Tray will be hot! Use a utensil.Place salmon, skin-side down, in now-empty side of tray. Top with minced garlic and chili pepper (use less if spice-averse) and massage into salmon. -
3 Bake the Meal
Bake uncovered in hot oven until salmon reaches a minimum internal temperature of 145 degrees, 10-15 minutes.
Carefully remove tray from oven and drain any excess liquid. Tray will be hot! Use a utensil.To serve, top salmon with butter (to taste) and garnish vegetables with crispy jalapeños (to taste) and sour cream. Bon appétit!
