    roast the sweet potatoes

    peel and cut sweet potato into ½" dice. onion into ¼" dice. place potato and onion on prepared baking sheet. toss with 1 tsp. olive oil, seasoning blend, and ¼ tsp salt and a pinch of pepper. roast 15-18 minutes until potatoes are tender. while roasting, prepare the ingredients.

    mince cilantro. quarter lime.

    divide cheese and filling between tortillas, then fold in half.

    2 tsp. olive oil in large non-stick pan over medium heat. work in batches 2-4 minutes per side until golden brown.
