Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Prepare The Ingredients
Cut broccoli into bite size pieces
Coarsely chop pineapple -
2 Cook The Rice
"Bring a small pot with rice and 11/2 cups water to a boil.
Reduce to a simmer, cover, and cook until rice is tender, 18-20 minutes.Remove from burner and fluff with half the garlic salt. Set aside. -
3 Roast The Vegetables
Place broccoli remaining garlic salt, and a pinch of salt and pepper on prepared baking sheet and toss with 2 tsp olive oil.
Roast in a hot oven until vegetables are fork tender, 15-17 minutes.While vegetables roast, prepare the mahi mahi. -
4 Cook The Mahi Mahi
Halve mahi mahi pieces and top with a pinch of salt and pepper. Spread mayo evenly on fillets and top with coconut panko.
Place a medium non-stick pan over medium heat and add 4 tsp. olive oil. Add mahi-mahi panko side down to hot pan. Cook until mahi-mahi reaches desired doneness (medium-rare to well-done), 2-4 minutes per side for medium. Consuming raw or undercooked mahi-mahi may increase your risk for food-borne illness.Transfer fish to a plate. Reserve pan; wipe clean -
5 Make The Sauce and Finish The Dish
In the same pan over medium heat, add tomato paste, demi, and 1/4 cup water. Stir to combine.
Add pineapple brown sugar, and a pinch of salt; bring to a simmer.Plate dish as pictured on front of card, serving sauce with mahi. Bon appétit!
