  1. 1

    Start the Vegetables

In a microwave-safe bowl, combine Brussels sprouts and 1 tsp. water. Cover with a damp paper towel.

Microwave covered until Brussels sprouts are bright green, 3-5 minutes.

    Carefully remove from microwave.

Place Brussels sprouts and bell peppers in provided tray and toss with 2 tsp. olive oil, umami seasoning, 1/4 tsp. salt, and a pinch of pepper. Push to one side of tray.

  2. 2

    Add the Chicken

    Finely crush wontons.

In a mixing bowl, combine wontons, flaked coconut, and 1 tsp. olive oil.

Pat chicken dry and season both sides with curry powder.

Place chicken in empty side of tray. Evenly top with 1/3 the teriyaki glaze (reserve remaining for garnish), then coconut mixture, pressing gently to adhere.

  3. 3

    Finish the Meal

Bake uncovered in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.

Carefully remove tray from oven and drain any excess liquid. Tray will be hot! Use caution.

Stir softened butter into vegetables until melted and combined. Tray will be hot! Use a utensil.

To serve, top chicken with remaining teriyaki glaze (Do not cross contaminate! Use a new utensil.) and sesame seeds. Bon appétit!
