Broccoli and cheddar is a classic soup, but we at the Home Chef kitchen love nothing more than tweaking the classics. This soup contains both turkey and bacon, two forms of protein, and crunchy crackers and sour cream sitting on top, as well as fresh broccoli and gooey cheese. This may be a new classic.

If using diced chicken breasts, pat dry. Follow same instructions as ground turkey in Steps 2 and 3, stirring occasionally until browned, 2-4 minutes, adding ingredients, then simmering until thickened and chicken reaches minimum internal temperature, 3-6 minutes.

If using ground beef, follow same instructions as ground turkey in Steps 2 and 3, breaking up until browned, 2-4 minutes, adding ingredients, then simmering until thickened and beef reaches minimum internal temperature, 3-6 minutes.

1 Prepare the Ingredients
Cut broccoli into 1/2" pieces.
Trim and thinly slice green onions on an angle, keeping white and green portions separate.Coarsely crush crackers. -
2 Start the Soup
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.
Add ground turkey, bacon, white portions of green onions, and broccoli to hot pan. Stir occasionally, breaking up turkey until browned, 3-5 minutes. -
3 Finish the Soup
Add flour and stir until no dry flour remains.
Stir in 21/4 cups water, softened cream cheese, and chicken base. Bring to a simmer.Once simmering, stir occasionally until soup has thickened, broccoli is tender, and turkey reaches a minimum internal temperature of 165 degrees, 4-6 minutes.Stir in 1/2 tsp. salt, a pinch of pepper, and shredded cheese until cheese is melted and thoroughly combined, 30-60 seconds.Remove from burner. -
4 Finish the Dish
Plate dish as pictured on front of card, topping soup with green portions of green onions, crushed crackers, and sour cream. Bon appétit!
