Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Start the Meatballs and Mashed Cauliflower
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
In a mixing bowl, combine ground turkey, panko, ricotta, garlic salt, and a pinch of salt and pepper. Form into 12 equally-sized meatballs.Place meatballs in one provided tray.Add mashed cauliflower to second provided tray.Bake both trays uncovered in hot oven until meatballs start to brown, 8-10 minutes. -
2 Add the Corn and Sauce
Carefully remove trays from oven.
Top meatballs with portobello sauce.Carefully add cream cheese and buttermilk-dill seasoning to mashed cauliflower. Stir vigorously until combined. Cream cheese will melt as meal bakes.Push mashed cauliflower to one side of tray.Add corn to now-empty half of tray. Season with 1/4 tsp. salt and a pinch of pepper.Cover mashed cauliflower side of tray with foil. -
3 Bake the Meal
Bake both trays (meatballs uncovered, mashed cauliflower and corn half-covered) in hot oven until meatballs reach a minimum internal temperature of 165 degrees, 10-15 minutes.
Carefully remove both trays from oven.Stir butter into corn and stir mashed cauliflower vigorously until smooth.To serve, top meatballs with sauce from tray. Bon appétit!
