Like the wizard children in Harry Potter, these three cheeses each have an important contribution to this pasta. The Parmesan is the utility player, the lead, with a nice lighting bolt tattooed on his forehead. The Asiago is slightly intellectual, a know-it-all that really does know it all. And the cream cheese is like everyone's favorite red-headed wizard child, accessible and homey. Three wizards, three cheeses, all for a pasta meal that's pure magic. Tip: Make quick work of mincing garlic by smashing the whole clove with the side of your chef's knife. Then rock the knife back and forth, keeping the tip steady by resting your other hand over the top.
