Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Prepare The Ingredients

    Stem and coarsely chop thyme.

    Halve mahi-mahi pieces.

    Cut broccoli into bite-sized pieces

    Cook The Farro

    "Bring a small pot with farro, 11/2 cups water, and 1/4 tsp. salt to a boil.

    Reduce to a simmer, cover, and cook until tender, 18-22 minutes.

    Drain farro in a wire-mesh strainer (there may not be any excess water)."

    Stir in thyme, garlic salt, and 1 packet demi. Set aside.

    While farro cooks, prepare the bread.

    Roast The Broccoli

    Place broccoli on prepared baking sheet. Toss with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper and spread into a single layer. Roast in hot oven until browned and fork-tender, 14-16 minutes.

    Toast Breadcrumbs and Roast The Mahi

    Combine panko and 2 tsp olive oil in a medium nonstick pan over medium heat. Cook until lightly toasted, 2-3 minutes. Transfer to a plate. Reserve pan; wipe clean.

    Pat mahi pieces dry and season with a pinch of salt and pepper. Spread mayo evenly on pieces. Top evenly with panko and press to adhere. Place in baking sheet with broccoli and roast until mahi reaches a minimum internal temperature of 145 degrees, 5-7 minutes.

    Make The Sauce and Finish The Dish

    In a small pan over medium heat, add marsala wine and bring to a simmer. Stir in remaining demi and cook until slightly thickened, 2-3 minutes.

    Remove pan from heat and stir in butter.

    Plate dish as pictured on front of card. Bon appétit!
