A note about serious food allergies

There's something about tonkatsu… its sweetness maybe, or its slight tang… that make it the perfect dipping sauce. But we're not giving you some workaday chicken nuggets, made mostly of some kind of paste and freezer burn. Here, we have succulent medallions, crusted in panko, bringing juicy tender flavor and amazing crunch to the proceedings.

Recipe Steps

You Will Need

  • Olive Oil
  • Salt
  • Pepper
  • 1 Large Non-Stick Pan
  • 1 Medium Non-Stick Pan

Before You Cook

    Prepare the Ingredients

    Stem, seed, remove ribs, and cut green bell pepper into thin strips. Pat pork dry, and season both sides with ¼ tsp. salt and a pinch of pepper. Place panko on a plate and top with pork, pressing gently to adhere. Pork will only be crusted on one side.

    Cook the Pork

    Place a large non-stick pan over medium-high heat and add 1 Tbsp. olive oil. Add pork to hot pan, panko-side down, and cook until browned and pork reaches a minimum internal temperature of 145 degrees, 3-4 minutes per side. Remove from burner. Transfer pork medallions to a plate. While pork cooks, cook vegetables.

    Cook the Vegetables

    Place a medium non-stick pan over medium-high heat and add 2 tsp. olive oil. Add green bell pepper and zucchini to hot pan and stir occasionally until starting to soften, 3-4 minutes. Add carrots and garlic salt and stir occasionally until tender and lightly browned, 2-3 minutes. Remove from burner.
